“we arrive at Côm xào aptly named for its signature dish of Côm all right so we're going to get some green rice green rice is the same as white rice it's just when it's harvested green rice is harvested before it gets too far in the process so before it turns into yellow and white rice green rice is typically something that was eaten by the upper classes because it is so hard to cultivate and so hard to process but now it's a food that a lot of people have access to this is green rice with lotus seeds and coconut sauce mashed together and cooked in banana leaves the result comes in two versions a sticky rice that's eaten directly out of the leaves and the other a drier portion that's served underneath on the side to flavor everything is a special coconut sauce that's made in House Green rice cake with coconuts inside coconut sauce is very good very sweet very not exceptionally sweet on its own but it does have a sweet flavor and then the best part is this that's really good the coconut is amazing like coconut pudding that's exactly what it tastes like so it's the sticky rice but then the coconut strips inside kind of what give it its sweetness yeah so the lotus seed has like a almost like a dry macadamia nut but sweet dry macademian nut with some sweetness to it as a snack I like this green rice it's a little bit sweet with the coconut this fried version is dry so you need to use the coconut sauce to kind of give it some give it some moisture but it's really good but honestly this version this is a very unique taste like I said it's almost like a tapioca pudding you to eat it it's really hard to believe that it's rice because it doesn't have the flavor of rice it really has that sweetness to it and the consistency is very sticky and gooey and pull it apart it's uh almost like eating like gummy bears this is a very unique to to Hanoi a very unique dish here this uh green rice and it is completely vegetarian this is not a substitute of a meat dish this is just how it's eaten there's traditionally no meat or meat products green rice”
