The chicken we bought at Lamai Fresh Market is like the best chicken in the world. It is marinated very simply with fish sauce. They use some flour as well to give that extra crispiness, and I'm pretty sure they left the chicken marinated overnight because the flavors are fully inside, in the deepest parts of the chicken. It is delicious. Look how juicy it is. It is falling apart. Fatty, tasty, salty, best chicken in town. No KFC, no McDonald's. This is proper Koh Samui chicken.”
