In their own words: “This is behind the counter at a local Japanese 3rd generation ramen shop. I'm taking you deep into the kitchen at Omori Ramen, which is tucked away at the quiet base of Niigata's mountains, known in Japan as Snow Country. Founded in 1951, the shop's original owner pioneered the Joetsu Myoko area's Tonkotsu Shoyu, pork bone soy sauce ramen, and it's been a local mainstay through generations. And even to this day, there's always a line out the door.”
